
Chatham Vineyards is located on Virginia's historic Eastern Shore, between the Atlantic Ocean and the Chesapeake Bay. The high-density, European-style vineyards contain 32,000 Chardonnay, Merlot, Cabernet Franc, Cabernet Sauvignon and Petit Verdot vines. Our vineyards benefit from well-drained sandy loam soils, a maritime climate allowing for a long growing season, a nearly constant breeze and favorable temperatures during the grape harvest season in September and October.
A
versatile Cabernet for food pairings with medium-bodied cheeses, grilled
or roasted meats, and rich sauces. Well-balanced with a very rich, ripe
tannic structure. Flavors of ripe raspberry with a velvety mouth feel.
Floral notes of violet on the nose and a hint of pepper on the finish.
Aged in new French oak for nine months.
A lovely red dessert wine with 3.5% residual sugar. Made from a blend of Cabernet Franc and Merlot in 2007 when we had the good fortune to experience 8 weeks of dry sunny days and cool nights, thus the perfect situation for a late harvest wine.
The
Steel Chardonnay is made from the French Dijon grape clones 95, 96 and
76 and fermented in stainless steel, temperature-controlled tanks. It is
a pure expression of the varietal, vineyard site and vintage. The result
is a wine with a tropical fruit flavor and crisp acidity.
Pairs well with: oysters, clams, flounder and other seafood
The
oak blend Chardonnay is fermented and aged for seven months in French and
Virginia oak barrels and blended with the steel Chardonnay. The result
is a pleasing combination of ripe fruit with balanced acidity, toasted
vanilla and almond flavors.
Pairs well with: poultry, pork, salmon, shellfish, cream-based sauces and pastas
Off-dry
with a hint of sweetness, the Rosé is produced by limiting the time
the Merlot grape skins are in contact with the juice during the fermentation
process. This produces a wine of lighter color and reduced tannins yielding
floral characteristics with hints of strawberry and cranberry flavors.
Pairs well with: crab meat, rockfish, scallops, poultry and pork
The
Merlot is a well-balanced wine with ripe tannic structure and elegant dark
cherry and rich black currant flavors. The wine is barrel-aged for more
than twenty months.
Pairs well with: beef, veal, and pork loin and compliments Mexican and Asian-spiced foods
Vintner's
Blend is a classic Bordeaux-style wine made from Merlot, Cabernet Franc
and Cabernet Sauvignon grapes barrel-aged in French oak. The blend was
created from the vintner's choice of select barrels. The result is an elegant
and well-integrated wine with good tannic structure and ripe fruit.
Pairs well with: beef, venison, and lamb chops
